Bodega Chozas Carrascal is one of 17 wineries with Spain’s highest designation, Vino de Pago. Located in a nature preserve at 750-840 altitude, Chozas Carrascal is committed to reducing carbon emissions. The winery currently uses solar panels and is close to achieving carbon neutrality. In the winery, the respect for the ‘cultivo ancestral’ is maintained through the strict use of native yeasts. All of the red wines are spontaneously fermented and the Bodega has worked with a local university to create a “yeast bank” from strains obtained in its own vineyards.

Chozas Carrascal’s idea is to continue learning year by year and dedicate part of our time to studying and implementing new techniques or old techniques that are renewed and adapted to their environment.
They were, at that time, the pioneering Spanish wine cellar in planting vines in trellis in their area. The planting framework of the estate was similarly a revolution in the area, as they were committed to growing more plants per hectare to increase competition between them and get a higher quality grape. Today, they have 3.300 vines per hectare, and each vine does not exceed two kilos of production.
As opposed to the still fashionable Anglo-Saxon tradition for monovarietal wines, at Chozas Carrascal wine cellar they settled on the Mediterranean culture of blending wines. A fair mix of different varieties, where each one brings the best of itself each year, resulting in excellent wines, each with its own personality.
