Scions of Sinai Senor Tallos

This boutique Stellenbosch winery (> 900 cs/yr) focuses on Rhone varietals and is 3 km from the Atlantic Ocean. Rare for the area, Winemaker Bernhard Bredell focuses on purity, and follows organic, dry farming, with minimal intervention practices. His vision is to restore his seven-generation wine farming roots, sustainably.

This skin macerated white wine spends 25 days fermenting on the skins before basket pressing. Fragrance of lemon tea with notes of honey, citrus, brazil nuts and sourdough. Weightlessly complex, with grainy tannins that cement a lasting flavor persistence. Integrated natural acidity creating focus and length together with the great textural feel orange wines bring forfood pairings. With a flor aged component adding another dimension.

The wine is a perfect match for hot curries like vindaloo, jalfrezi, and rogan josh. It's also a great wine to pair with dishes from the African continent. Moroccan and Ethiopian cuisine all pair very well. It has a salinity and texture that pairs well with other robust flavours and texture. Good to enjoy on its own as it is still quenchingly light, but a long stretched flavour and decent acidity.
