This is one wine that you can enjoy two ways - nondisgorged or disgorged. For those of us sheltering in place, DIY disgorging is a pretty fun activity to do.
As is, the wine is nondisgorged (the lees aren't removed from the wine), making it more of a natural wine style and cloudy in appearance. The yeast autolysis continues until the bottle is opened. The more time that the wine is left on the lees, the greater the complexity, structure, and creaminess.
If you choose to disgorge the wine, YOU get to decide the lay down time, which is pretty exciting. Drink it in a week, a month, a year - and the wine will evolve. To disgorge, you can follow the provided instructions on the wine's necktag to disgorge the wine at home - invert the bottle, wait a week, and place the bottle in the freezer. This process traps the lees and enables you to disgorge cleanly and at home.
